4 russet potatoes

2 cups pulled pork

½ cup shredded sharp cheddar

½ cup shredded mozzarella cheese

2 tbsp melted butter

1 tbsp oil

For the sauce:

1 ½ cups ketchup

½ cup water

½ cup apple cider vinegar

½ cup brown sugar

¼ cup mustard powder

2 tsp paprika

2 tsp garlic powder

1 tsp salt

1 tsp ground black pepper

Garnishes: sour cream, crispy bacon, green onion, hot sauce



1.      Preheat
your oven to 400 degrees. Wash and dry your potatoes, and
rub oil into the skins. Pierce the skins with a fork and put them on a lined
baking tray in the oven. Allow to cook for one hour.

2.      While
waiting on your potatoes to cook, mix your bbq sauce. This will prevent the
meat from drying out later. This recipe should yield about 3 cups of bbq sauce.

3.      Once
you’ve mixed all your sauce ingredients, add the pork and allow to simmer in a
pot for 30 minutes.

4.      When
your potatoes are soft, take them out of the oven and slice them in half
lengthwise. Scoop out the soft insides of the potatoes, making sure to keep at
least ¼ inch of flesh inside the skins.

5.      Brush
the inside and outside of your potato skins with your melted butter, then load
with your pulled pork.

6.      Sprinkle
equal parts mozzarella and cheddar cheese on your potato skins. Lower your oven
temperature to 350, and bake until the cheese has
